This Strawberry Mousse for Two is a very simple dessert, and it won't surprise you that it will incorporate strawberries. Just 4 ingredients make this airy dessert that you prepare in about 15 minutes.

This dessert is not meant to be fancy or anything, just really flavorful and served in glasses for some additional flair. You may think, “I’ll eat fresh fruit with cream, big deal”! Realize this, every year, during the Wimbledon Tennis Tournament, people can’t get enough of strawberries and cream. And they cannot stop talking about it, as if it is something special and it may be special, because you eat it as Wimbledon. So, let’s agree this dessert is worth eating and simple to make, so no excuses.

  • Whipping cream
  • Vanilla extract

How to Make Strawberry Mousse for Two

Step 1 – Hull and wash the strawberries and cut them in quarters. Place the fruit in a food processor and process to puree. You can also use an immersion blender. Keep about 1/4 aside for later.

Add half of the powdered sugar and pulse again.

Step 2 – Whip the whipping cream with the remaining powdered sugar and vanilla extract and mix it with the strawberry puree. Don’t mix more than necessary, the more air stays in the cream the better.

At this moment, you can pour the strawberry mousse through a sieve, if you want a super smooth mousse. I prefer not to do that, and actually enjoy the crunchy pieces.

Step 3 – Place the mousse in the fridge for a minimum of 2 hours and then transfer to a tall glass. Start with the mousse, then a few pieces of the strawberries you kept behind, followed by mousse – strawberries – mousse. Decorate with a strawberry on top or some whipped cream if you prefer.

If you don’t have a tall glass or just want to serve the dessert, any glass or bowl will do.

Ingredients
 

  • 1/2 pound strawberries
  • 4 tablespoons powdered sugar
  • 3/4 cup whipping cream
  • 1/4 teaspoon vanilla extract

Instructions
 

  • Wash the strawberries, hull them and cut them in quarters (leave about 1/4 of the pieces aside) and place fruit in a food processor. Process to a puree. Add 2 tablespoons of powdered sugar and pulse briefly to combine. You can also use an immersion blender.
  • In a bowl mix whipping cream with vanilla extract and the remaining 2 tablespoons of powdered sugar and whip until stiff.
  • Mix the strawberries with the whipped cream and place bowl in the refrigerator for 2 hours.
  • Divide strawberry mousse and strawberry pieces over 2 tall glasses, end with the mousse.
  • Decorate with a small strawberry.
