The idea is borrowed from the French tarte tatin; a classic upside-down tart where the bottom of the dish becomes the top when you flip it. Here the concept goes savory: potato takes the place of pastry, apple replaces the usual fruit filling, and sage ties the two together with a hint of warmth. What comes out of the oven is a compact, golden galette that looks considerably more involved than it actually is.
It’s sized for two, baked in a 6-inch pie dish, and serves as a side dish substantial enough to hold its own alongside roast chicken, pork tenderloin, or duck. The Honeycrisp apple is the right choice here. It’s sweet enough to complement the potato without turning the whole thing into a dessert, and firm enough to hold its shape through 40 minutes in the oven.
Why This Combination
Potato and apple is a combination that sounds unlikely until you taste it. The apple softens into the potato layers as it bakes, adding just enough sweetness to round out the richness of the butter without making the dish sweet. Sage is the bridge between the two; earthy, slightly resinous, and at home with both ingredients. Baking it upside-down means the bottom layer of potato, which sits directly on the buttered parchment, caramelizes into something close to crispy, which is the best part of the whole thing.

Key Ingredients in This Recipe

You’ll find the complete list of ingredients and exact quantities in the recipe below.
- Potatoes – Use the type of potato that stays whole, a waxy potato, like a Yukon Gold.
- Apple – Pick an apple that’s sweet and not too tart, for a nice contrast with the potato without becoming overwhelming. I used a Honeycrisp
- Butter
- Sage

How to Make Potato & Apple Galette
Step 1 – Prepare a small (6-inch) pie dish by lining the bottom with parchment paper. Then butter the sides as well as the parchment paper. Preheat the oven to 450°F.

Step 2 – Core the apple and slice apple and potatoes thinly by hand or use a mandoline. Place the slices in separate bowls and drizzle slices with butter, salt and pepper and toss to coat.
Step 3 – Arrange 2 layers of potato slices in the bottom of the pie dish.

Step 4 – Add a layer of apple slices on top of the potato slices.
Step 5 – Sprinkle the apple layer with finely chopped sage.

Step 6 – Cover apples with final layer of potato slices. Drizzle with any left-over butter from the potato or apple bowls.
Slide Potato & Apple Galette in the oven and bake for 40-50 minutes or until potato slices are done. If the top turns too brown before potato is done, cover with aluminum foil.
Step 7 – Place a plate on top of the pie dish and turn galette onto that plate. If you want the top to be more caramelized, broil the galette until it reaches the color and crispiness you like (make sure you use a broiler-safe plate).

Sprinkle the top of galette with sage. ENJOY !
