Potatoes are a staple side dish in many forms, and this Potato & Apple Galette is a delightful twist on the classic. Baked upside-down, it features two layers of slightly caramelized potato slices with a middle layer of sweet apples. This combination not only adds a touch of sweetness but also enhances the overall flavor of the potatoes.

Instructions
Prepare a small (6-inch) pie dish by lining the bottom with parchment paper and the sides and parchment paper with butter. Preheat an oven to 450°F.
Core the apple and slice apple and potatoes thinly by hand or with a mandoline. Place the slices in separate bowls and drizzle slices with butter, salt and pepper and toss to coat.
Arrange 2 layers of potato in the bottom of the pie dish.
Add a layer of apple slices on top of the potato slices.
Sprinkle the apple layer with finely chopped sage.
Cover apples with final layer of potato slices. Drizzle with any left-over butter from the potato or apple bowls.
Slide Potato & Apple Galette in the oven and bake for 40-50 minutes or until potato slices are done. If the top turns too brown before potato is done, cover with aluminum foil.
Turn galette onto a plate. If you want the top to be more caramelized, broil the galette until it reaches color and crispiness you like (make sure you use a broiler-safe plate).
