I had a long list of recipes I needed to try, some of which I will need to re-try, I had to do the books of the company (not cooking them) and more administrative work, Skype with my mom, who is 6 hrs. ahead of me and before I knew, light was fading, temperature dropping. So dinner time came way way too fast and I needed a quick solution – Zebra Pasta with Pumpkin Cream Sauce was born. It is a really easy recipe, and I think it looks nice and appropriate with Halloween approaching.

With no small kids around, we don’t do much about Halloween in our house, but because the entire country is in Halloween-mode there is no escaping. The zebra striped bowties are a great contrast with the orange pumpkin sauce. There is absolutely nothing difficult about this recipe. The only thing you need is to add cream and salt and pepper to pumpkin puree and the sauce will be delicious; it does not really need anything else.

Instead of combining a sauce with bells and whistles with a standard pasta; this recipe is the other around. A very simple sauce with a beautifully crafted pasta. As you can see the colors stay bright, even after cooking. Sometimes you are lucky and can serve a dinner in under 10 minutes and it looks really pretty.
Zebra Pasta with Pumpkin Cream Sauce

- 4 ounces zebra bowties
- 1 cup pumpkin puree
- 1/2 cup cream
- salt and pepper
- Parmigiano Reggiano cheese or Grana Padano Cheese
Instructions
- Cook the pasta according to the directions on the package and drain.
- Warm the pumpkin in a skillet and add the cream.
- Season with salt and pepper and mix.
- Divide the pumpkin sauce over 2 plates and place the pasta in the center.
- Top with some grated Parmigiano Reggiano or Grana Padano cheese.
