Strawberry, Mango & Avocado Salad

This Strawberry, Mango & Avocado Salad is fun to make. All it takes is peel and cut the fruits, tear the lettuce and make a simple dressing. A vinaigrette of oil, balsamic vinegar, honey and mustard. Ready in no time.

I ate this salad as a meal, with some bread and felt really happy afterwards. This may sound funny, but when a recipe turns out the way you want in appearance and taste, I am just a happy camper.

I often eat salads, especially when the weather is hot, or when the previous day my dinner was a little heavy. Salads are great appetizers, side dishes or a meals. Serve this Strawberry Mango Avocado Salad with some lean protein and your dinner will be complete.

FOR THE SALAD

  • Mango
  • Strawberries
  • Avocados

FOR THE DRESSING

  • Olive oil

The colors of the fruits are just amazing and a Balsamic Mustard Dressing adds a darker film over the fruits. A hint of balsamic, in combination with the mustard and the sweetness of the honey and the individual fruits is just delicious.

How to Make Strawberry, Mango & Avocado Salad

  • Step 1 – Wash the lettuce leaves and tear in small pieces. Let me say that the lettuce is not a must in this salad. It is more for color and garnish.
  • Step 2 – Peel the mango and cut the fruit in small pieces. Wash the strawberries, pick off the green tops and quarter them or cut them even smaller, depending on the size of the strawberry. Peel the avocados, and cut the fruit in small pieces.
  • Step 3 – Make the dressing by mixing the olive oil, mustard, balsamic vinegar, honey and salt and pepper.
  • Step 4 – Mix the vinaigrette with the fruits and transfer into a large bowl. Garnish / decorate with lettuce leaves.

Pick the Strawberries Right

When I buy strawberries, I always first smell them; somebody told me that once. When you want to eat them immediately, you should be able to pick up the strawberry scent, through the holes of the container. Of course you need to look at them as well. Make sure you don’t have many unripe parts, no damaged strawberries at the bottom. But this smelling, this ‘sticking-your-nose-close-to-the-package’, will tell you whether the fruit is ripe. I have never been wrong since.

  • This salad is very flexible as far as fruit choice is concerned. You can add or replace fruit easily.
  • This salad is also flexible as far as additions. Add Feta cheese, Mozzarella, a poppy seed vinaigrette.

Ingredients
 

  • 4 bibb lettuce leaves, or Boston lettuce leaves
  • 8 ounces mango
  • 8 ounces strawberries
  • 1 avocados
  • 2 tablespoons olive oil
  • 1 tablespoons balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • salt & pepper
