Frozen Yogurt Berry Bark

Cool down with frozen yogurt berry bark, a welcome healthy and cold alternative to a soda, iced tea or a popsicle on hot summer days. It is a good snack for all seasons, a combination of Greek yogurt and fruits and very flexible to adjust to seasonal flavors.

What exactly is frozen yogurt bark? It is as simple as a frozen sheet of yogurt that is decorated or mixed with berries and nuts (in this case). Since this is a recipe families like to make with their children, you cannot go wrong. What’s great about frozen yogurt bark is that you can use whatever fruit you like, whatever fruit you have on hand or needs to be used up.

Alternatives and Substitutes

There are so many options that the list below is just a few.

  • Use vanilla-flavored yogurt instead of plain yogurt or add a teaspoon of vanilla extract to plain yogurt for the same effect.
  • You can use frozen fruit instead of fresh fruit or even dried fruit.
  • Other fruit choices could be: mango, kiwi, pineapple, banana
  • Add any type of chopped nuts.
  • Consider toppings like seeds, coconut flakes, chocolate chips, raisins or even granola.
  • You could also use finely chopped Oreo cookies or Reese’s cups.
  • Make the bark vegan by using dairy-free yogurt.
  • You could also pick one fruit and mix that in the food processor with the yogurt, creating a very colorful bark. You’ll get a purple bark from blueberries, a pink one from strawberries.
  • You could mix cocoa powder or peanut butter with the yogurt for a light or brown bark base

  • 3/4 cup Greek yogurt, full-fat
  • 1 tablespoon maple syrup
  • 0.5 ounces strawberries, sliced
  • 1.5 ounces blueberries
  • 1 ounce raspberries
  • 1 tablespoon pistachio nuts, finely chopped

Instructions
 

  • Mix yogurt with maple syrup. (NOTE 1)
  • Line a baking sheet with parchment paper and spread the yogurt mixture evenly onto it. (NOTE 2)
  • Scatter slices strawberry, blueberries and raspberries as well as chopped pistachios on top of the yogurt. Any pattern or no pattern.
  • Place the baking sheet in the freezer for at least 3 hours or until yogurt is firm.
  • Cut or break the bark into manageable pieces and serve. (NOTE 3)

Notes

  1. If you think that plain yogurt is a little to sour, use vanilla-flavored yogurt instead or add 1/2 teaspoon of vanilla extract. 
  2. I used 1/8 baking sheet, about 6.5 x 9.5 inches.
  3. Whatever you’re not eating right away, store it in a sealed freezer bag. I prefer to wrap them in parchment paper first, so they don’t stick together in the freezer bag.
