This recipe is also a wonderful option for a grab-and-go breakfast. Make it in a mason jar, it takes about 5 minutes, and your chaotic morning just became a little less hectic.

- Greek yogurt – any type of yogurt will work. Greek yogurt, plain yogurt, flavored yogurt or a plant-based yogurt.
- Ricotta – full cream or low fat, whatever your preference is.
- Raspberries
- Strawberries
- Blueberries
- Granola – store bought. I prefer homemade granola.

How to Make Yogurt Parfait for Two
Step 1 – In a trifle bowl, spoon about 1/4 cup of granola to create the first layer.


Step 2 – Cut the large strawberries in smaller pieces and mix them with the blueberries and raspberries. Top the granola with a layer of half of the mixed berries.
Step 3 – Mix the yogurt with the ricotta and spoon half of this mixture on top of the berries. This is the third layer.


Step 4 – Repeat the layers: add granola on top of the yogurt, then fruit and finish with yogurt.
Garnish with some fresh mint.
Refrigerate until ready to serve. Serve as quickly as possible, the granola will soak up the liquid from the berries and yogurt and will become soggy and lose its crunchiness.
Alternatives and Substitutes
- Yogurt – I like Greek yogurt, but plain yogurt, flavored yogurt or a plant-based yogurt will work as well. You may even want to change-up the type of yogurt depending on the fruits you’ll use.
- Ricotta – you have options here. There are many alternative to ricotta, I’ve written them down here. In my opinion, the best alternative in this recipe would be cottage cheese. It has a similar protein content, but is lower in fat than ricotta. If you want the cottage cheese to be smooth, use a food processor. Of course, you can do without this step as it is more for for looks than anything else.
- Fruit – I used blueberries, raspberries and strawberries, but feel free to mix it up with whatever is in season. Like apricot, peaches, pear, oranges, apple, blackberries, cantaloupe, banana, pineapple, kiwi etc. Or . . . .
- Use frozen fruits or a mixture of frozen and fresh.
- Add dry fruits if you still have some lurking in your pantry, think about dried cranberries, cherries, apricot, raisins, dates etc.
- Go fancy, and roast some of the fruits. Like roasted peaches, plums, pineapple.
- Granola – use store-bought granola or make it yourself. Alternatively, use muesli instead.

Frequently Asked Questions
Yes, you definitely can make this ahead of time. I would only NOT add the granola, yet. I know that you’ll lose a layer, but granola can become soggy. So, I would add the granola, the moment you plan to eat the parfait.
If you use frozen fruits instead of fresh or a mix of fresh and frozen, there is no need to thaw the frozen fruits first. You can add them frozen and they will thaw overnight.
If you plan to enjoy this breakfast multiple mornings, I would prepare the fruits, the yogurt/ricotta mix and keep them in separate airtight containers and create the parfait on the spot.
There are a number of options.
1. You can sweeten each layer the way you like or drizzle something over the parfait at the end, like honey, agave nectar or maple syrup.
2. You can add some preserves, jelly or jam to the fruit layer or only use preserves and skip the fresh fruit.
3. You could add some chocolate chips or peanut butter chips.
Adding even more protein is simple. Mix a protein powder of your choice into the yogurt-ricotta mixture. If the mixture becomes too thick, add some milk to thin it out.
