How to Make Sautéed Corn with Pepper & Potato
Step 1 – Heat oil in a skillet and add onion, potato, bell peppers (all chopped to equally sized pieces) and salt. Stir.


Step 2 – Cover skillet and cook over medium low heat until onions and bell peppers are softened and potatoes are starting to brown. Stir frequently. This will take about 6-7 minutes.
Step 3 – Add corn and garlic, again stir frequently and sauté until the corn is tender, but still with some bite left. This will take about 5 minutes.


Step 4 – Remove the pan from the heat and add the parsley. Add salt & pepper to taste and a squeeze of lemon juice.
