Fresh corn cut from the cob, red potatoes, red and green bell pepper, red onion, garlic, and parsley, sautéed together in one pan until everything is tender and slightly caramelized at the edges, finished with lemon.

Ingredients
1tablespoonolive oil
1ounce red oniondiced small
4ouncesred potatoesdiced small
2.5 ouncesgreen bell pepperdiced small
2.5ouncesred bell pepperdiced small
1/4teaspoonsalt
5ouncescorn kernelsfrom fresh corn
1clovegarlic
1tablespoonparsley finely chopped
1squeezelemon juice
salt & pepper
Instructions
Heat oil in a skillet and add onion, potato, bell peppers (all chopped to equally sized pieces) and salt. Stir.
Cover skillet and cook over medium low heat until onions and bell peppers are softened and potatoes are starting to brown. Stir frequently. This will take about 6-7 minutes.
Add corn and garlic, again stir frequently and sauté until the corn is tender, but still with some bite left. This will take about 5 minutes.
Remove the pan from the heat and add the parsley. Add salt & pepper to taste and a squeeze of lemon juice.
