Prosciutto Wrapped Carrots

Whether you’re looking to impress at a dinner party or elevate a casual weeknight meal, these prosciutto-wrapped carrots transform humble vegetables into a dish of gourmet simplicity.

Key Ingredient in This Recipe

  • Carrots – you can use small carrots or larger ones as I did and cut them into long matches.
  • Prosciutto ham – bacon is an alternative, but requires longer cooking time.
  • Parsley
  • Butter

How to Make Prosciutto Wrapped Carrots

  • Step 1 – Cut the carrots in long matches and cook them for 3-4 minutes in water with a pinch of salt. The carrots should still have a bit to them. If you cook them longer they will fall apart, when you try to wrap them in the ham.
  • Step 2 – Finely chop the parsley
  • Step 3 – Cut the slices of Prosciutto ham in half, lengthwise or fold them double.

Step 4 – Double stack the prosciutto halves, sprinkle with a little bit of parsley and place a bundle of carrot sticks on the ham, perpendicularly.

Roll them ham around the carrot sticks.

Step 5 – Heat butter in a skillet and cook the Prosciutto wrapped carrots in about 5 minutes until the ham is crispy.

Alternatives and Substitutes

  • Ingredients
    • Carrots – If you can find young thin carrots, you can use 2-3 in a bundle, but if you can only find big carrots it’s better to cut them into long sticks or matches.
    • Prosciutto ham – Alternatives are Serrano ham or coppa, speck, Black Forrest ham (Schwarzwald Schinken in German). You can also replace the ham with bacon or pancetta, but that will increase the fat content and it needs a longer cooking time.
    • Parsley – can be replaced with thyme, rosemary, sage
  • Cooking method
    • Instead of cooking the carrots, you could change this recipe in a non-cook version. Cut the carrots very thin and simply wrap the Prosciutto around them and leave it at that.
    • Instead of cooking the Prosciutto Wrapped Carrots in a skillet you can prepare them in the oven as well. As this may dry out the ham a little more, while the cooking is a little longer, you may need to adjust the cooking time of the carrots as well, to have both carrots and ham at the right tenderness when done.
