Pizzas are especially nice because they naturally invite sharing and do not need much alongside them. This is the sort of recipe that works beautifully for date night at home or a slightly more dressed-up casual dinner. Pear, Brie and Prosciutto Pizza with a drizzle of honey feels refined, but still easygoing in the best way.
As you can see in the picture; I am not very concerned with the shape of a pizza, especially when I make pizza for just the two of us. The shape does not change the flavor of the pizza. It’s the crust and the toppings; my hand-made pizza bottoms usually look ‘rustic’.

How to Make Pear, Brie and Prosciutto Pizza
This recipe is about the toppings, as I am assuming that you already have your favorite pizza bottom in your arsenal, or that you use store-pizza dough or a store-bought pizza bottom. I prefer to make 2 small pizzas from a 1 pizza dough recipe, as there are often toppings my husband prefers that I don’t and visa versa.
- Step 1 – Heat your oven to the highest temperature, around 500 degrees F.
- Step 2 – Cut the onion in thing rings and caramelize these in a little bit of olive oil in a skillet. Do this slowly and you’ll have soft sweet onions.
- Step 3 – Wash the pear and take the core out (no need to peel it). Slice the pear thinly. Cut the brie in thin slices as well.
- Step 4 – Cut the dough in half and make 2 pizza bottoms, or keep one normal-sized pizza bottom. Place the pizza on a baking sheet that you dusted with cornmeal.
- Step 5 – Now start ‘decorating’ the pizza bottom with the toppings. Caramelized onions, pear, arugula, prosciutto, brie.

- When all is divided over the two pizza bottoms, drizzle each with little bit of honey, if you like.
- Slice baking sheet in the oven and bake the pizzas for about 10 minutes.

What will it taste like? Bread flavor from the dough; warm fruit but still crunchy; sweetness from the onion, peppery from the arugula mixed with the salty juices from the ham and the creaminess coming from the brie cheese.
