The dressing is oil, orange juice, and poppy seeds; simple enough to let everything else in the bowl come through clearly. The orange juice connects the dressing to the fruit without overpowering either, and the poppy seeds add a faint nuttiness that works quietly alongside the pecans. Buy a piece of blue cheese over crumbled cheese; a small piece goes a long way, and the difference in taste is immediate.

This is a salad built for two from the start. The avocado, the strawberries, and the cheese are all portioned for a bowl that serves two generous plates without anything left over to brown in the fridge overnight. Assemble it right before you eat, dress it at the last moment, and it is one of the better things a spring or summer evening can produce.

  • Blue cheese – Feta cheese or goat cheese are alternative options. Whatever you choose, don’t buy the pre-crumbled kind. It contains anti-caking agents to keep the pieces separate and natamycin to prevent mold. Both are ingredients you can do without.

How to Make Avocado Strawberry Salad

Step 1 – Make the dressing by mixing olive oil with orange juice, poppy seed and salt & pepper. Toss the dressing with the spinach.

  • 2 cups baby spinach

  • 1.5 tablespoons pecans, toasted and salted

Instructions

  • Hull the strawberries and and cut them in slices. Peel, pit and dice the avocado and mix the two.
  • Chop the pecans (NOTE 1)
  • Add the strawberry-avocado mix to the spinach as well as the chopped pecans, and crumbled blue cheese. (NOTE 2)
  • Toss the salad and serve on plates or in bowls.

Notes

  1. Instead of chopped pecans, you can leave the whole.
  2. Instead of mixing the blue cheese crumbles into the salad, you can decide to sprinkle them on top.
