Avocado Strawberry Salad for Two

Strawberries in a savory salad with blue cheese and avocado sounds like it needs convincing until you taste it and then it sounds obvious.

Ingredients
For the Salad
2
cups
baby spinach
5
ounces
strawberries
1
avocado
1.5
ounces
blue cheese
or feta or goat cheese
1.5
tablespoons
pecans
toasted and salted
For the Dressing
1/2
tablespoon
olive oil
or avocado oil
1.5
tablespoons
orange juice
1
teaspoon
poppy seeds
salt & pepper
Instructions
Make the dressing by mixing olive oil with orange juice, poppy seed and salt & pepper.
Toss the dressing with the spinach.
Hull the strawberries and and cut them in slices. Peel, pit and dice the avocado and mix the two.
Chop the pecans (NOTE 1)
Add the strawberry-avocado mix to the spinach as well as the chopped pecans, and crumbled blue cheese. (NOTE 2)
Toss the salad and serve on plates or in bowls.
Notes
Instead of chopped pecans, you can leave the whole.
Instead of mixing the blue cheese crumbles into the salad, you can decide to sprinkle them on top.
