A plate with 3 parts, a vegetable, potato/rice/pasta and meat/egg/fish, do you remember when you parents served that every day. I do, but have almost stepped away from that the moment I left my parents home. I love to create healthy dishes that are fun, quick and easy to make, different from the ordinary,  and delicious, all at the same time. When your base is sweet potato, you already take a step on the healthy path. You know there are actually very few unhealthy natural foods. It is the quantity and combination of ingredients that can be unhealthy, or a man-made product can be unhealthy, but at this moment I cannot come up with any truly unhealthy natural product. I know there are different opinions with respect to this, but this is my humble opinion.

  • Pastry dough – store bought
  • Sweet potato
  • Sausage – this can be chicken, Italian, chorizo, mild, spicy or even vegan. It depends on you, what are you preferences. Or do it with 2 different sausage like I did.
  • Mozzarella cheese
  • Sun-dried tomatoes
  • Coriander & oregano – here you can vary as much as you like to make it your own.
  • Basil

How to Make Sweet Potato Slab Pie

Step 1 – Line a baking sheet (6 x 9) with parchment paper. Thaw one sheet of pastry dough and roll it out to fit your baking sheet. Place the pastry dough on top of the parchment paper.

Step 2 - Cover the pastry dough with thin slices of sweet potato. Allow them to overlap.

Step 3 – Drizzle olive oil over the potato and season with salt, pepper, oregano and coriander.

Place the sausages on to of the potato slices. I’ve used mild chicken sausage and chorizo sausage.

Step 4 - Divide the mozzarella in between the sausages. Not on top of the sausages,  you want the meat to cook well and become crunchy. Place pieces of sun-dried tomatoes on top of the Mozzarella.

  • Step 5 – Bake the Sweet Potato Slab Pie in a 400 degrees F. oven for 15-20 minutes. Tear fresh basil in small pieces and sprinkle them over the slab pie.

Ingredients
 

  • 1 sheet pastry dough
  • 8 ounces sweet potato
  • olive oil
  • 7 ounces sausage, chicken, beef, Italian, chorizo
  • 4 ounces Mozzarella cheese
  • 0.5 ounces sun-dried tomato
  • salt and pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon coriander
  • basil

Instructions
 

  • Heat oven to 400°F.
  • Peel the sweet potato and cut them from end to end in very thin slices; using a mandoline or cut by hand.
  • Discard casing from sausage and cut sausage in half, lengthwise and then in half lengthwise again. (NOTE 1)
  • Slice mozzarella thinly.
  • Cover a quarter baking sheet (6 x 9 inches) with parchment paper. Roll out puff pastry on a lightly floured surface to fit the baking sheet. Transfer to baking sheet.
  • Place potato slices on the dough, allow edges to slightly overlap.
  • Drizzle potato slices with olive oil and then sprinkle with salt, pepper, oregano and coriander.
  • Divide the sausages evenly over potato slices.
  • Divide the mozzarella slices over potatoes, in between the sausages, and place here and there a piece of sun-dried tomatoes on top of the mozzarella
  • Place pie in oven and bake for approx. 15-20 minutes.
  • Sprinkle some basil over baked pie just before serving.

Notes

  1. Any type of sausage will work here. It depends on what you like to use; a spicy sausage to offset the mild flavors of the potatoes and Mozzarella, or a mild sausage to complement the other ingredients. You can select a vegan sausage if you prefer to keep it vegetarian.
