The next time you need a raspberry dressing, please refrain from buying a bottled vinaigrette or dressing. You most likely get more unknown ingredients than you wish for; from thickeners, artificial colors, stabilizers to preservatives. Make your own; it’s easy, quick and only requires 5 ingredients, plus salt & pepper.

Ingredients

  • 1 cup raspberries, about 6 ounces
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon light brown sugar
  • salt & pepper

Instructions

  • Place all ingredients in a blender; fresh raspberries (NOTE 1), olive oil, balsamic vinegar, honey, light brown sugar, salt and pepper.
  • Pulse until you have a uniform looking puree.
  • At this stage you can decide to leave the puree as it, or strain it and get rid of all the raspberry seeds. (NOTE 2)

Notes

  1. You can use frozen raspberries instead of fresh.
  2. I prefer to pass this vinaigrette through a sieve for a more elegant ‘sauce’.
