Raspberry Balsamic Vinaigrette is a vibrant, sweet & tart salad dressing made with fresh raspberries. The gorgeous color of this Raspberry Balsamic Vinaigrette says it all; it will elevate your salads.

Ingredients
1cupraspberriesabout 6 ounces
1/4cupolive oil
1tablespoonbalsamic vinegar
1tablespoonhoney
1tablespoonlight brown sugar
salt & pepper
Instructions
Place all ingredients in a blender; fresh raspberries (NOTE 1), olive oil, balsamic vinegar, honey, light brown sugar, salt and pepper.
Pulse until you have a uniform looking puree.
At this stage you can decide to leave the puree as it, or strain it and get rid of all the raspberry seeds. (NOTE 2)
Notes
You can use frozen raspberries instead of fresh.
I prefer to pass this vinaigrette through a sieve for a more elegant 'sauce'.
