I hope you’re ready to make a leap, as this Plum and Pecorino Salad is so worth it. Ripe sweet red plums coated with a simple dressing embark on a lasting relationship with salty Pecorino Romano.
With the approaching holiday season, I was planning on a first in a series of posts about fruit and cheese pairings, the latter being one of my favorite food groups. When in the grocery store, I saw there were still plums available, an alternative idea popped in my head; why not creating fruit and cheese parings in less traditional ways, like a simple salad. And here we are; an absolute wonderful combination of plums and Italian Pecorino cheese, if I may say so.
Key Ingredients in This Recipe
- Red plums
- Pecorino Romano cheese
- Dressing – red wine vinegar, maple syrup
- Salt & pepper
- Olive oil
How to Make a Plum and Pecorino Salad
Step 1 – Make the dressing. Simply mix red wine vinegar with maple syrup and add salt & pepper.
Step 2 – Slice the plums any way you like. You will need ripe plus to make this lovely flavor combination work and then there is not need to peel them.
Step 3 – Add the dressing to the bowl of plum slices and mix. Add the slivers or shavings of Pecorino Romano cheese and mix again.
Step 4 – Transfer the plum-cheese mixture onto a plate and drizzle with some olive oil.
Don’t be afraid to add the dressing and the oil, it is essential for this salad. Try the difference by comparing a slice of fruit and a sliver of cheese with this recipe and you will experience that the dressing and the olive oil drizzle add a dimension to the ingredients and elevates them.
Most of that experience is related to texture and mouthfeel and is vital in how we experience flavor. That’s why I often harp about adding different textures to a dish. The olive oil is the ingredient that binds everything together, you will see, trust me on this.
