Herb Crusted Salmon

Herb crusted Salmon is a simple yet elegant dish that brings together the boldness of smoked paprika with the brightness of fresh herbs. A mix of tarragon, parsley, and chives is massaged into the salmon for about an hour before cooking. This gives the fish time to soak up all those flavors. Whether you throw it on the grill or roast it in the oven, the result is a beautiful, tender and succulent piece of salmon with fresh herbal flavors and a hint of smokiness in every bite.

This recipe is a modern twist on a classic preparation that highlights the natural richness of salmon with the smokiness of paprika and the brightness of fresh herbs. It’s a versatile dish that draws inspiration from Mediterranean and French cooking traditions, where herbs and olive oil play central roles.

Grill or bake the salmon in the oven; it both works equally well. Serve as a weeknight dinners or at a date night for two. You’ll be serving a healthy, flavorful dish that feels both rustic and refined.

How to Make Herb Crusted Salmon

Step 1 – Make the rub by combining smoked paprika, olive oil, tarragon, parsley and chives (finely chop all the herbs).

Step 2 – Season the salmon with salt and pepper and then apply the rub on the salmon. If the rub is difficult to spread, add a little bit of olive oil.

  • Step 3 – Grill the salmon at 400°F for about 20-25 minutes. I do not grill the fish directly on the grates, but on a grill pan lined with aluminum foil. Hence the slightly longer grilling time. I use my favorite tool, the Meater, to keep track of the internal temperature. Once the fish is done, time to serve it on a plate.

I served the salmon on a bed of farro with mushroom, but so many side dishes will pair well with salmon, like roasted vegetables, rice, quinoa, or a salad, etc.
