Cinnamon Sugar Banana Bread

Most banana bread recipes are in a race to be moist. This one wins that race and then adds a cinnamon sugar crust on top that crackles when you slice through it and gives every piece a texture contrast that plain banana bread never has. Storing it may be the hardest part of the whole recipe.

Ripe bananas mash into the batter give the loaf its natural sweetness and moisture; the riper the better, which makes this a recipe worth keeping in mind when the fruit bowl gets ahead of you. The cinnamon sugar topping goes on before the tin goes into the oven, and as it bakes it forms a slightly crunchy, caramelized surface that holds together when sliced and makes the top slice the most coveted piece. The crumb beneath is soft and fluffy in a way that holds up in the fridge for a week.

How to Make a Cinnamon Sugar Banana Bread

  • Step 1 – Mix the wet ingredients in a large bowl: mashed bananas, melted butter, and eggs.
  • Step 2 – Mix the dry ingredients in another bowl: all-purpose flour, sugar, baking soda, cream of tartar, salt and cinnamon.
  • Step 3 – Mix sugar and cinnamon for the coating in a third bowl.
  • Step 4 – Add dry mixture to wet mixture and whisk until there are no dry spot visible.
  • Step 5 – Pour the batter in a cake form (9″), lined with parchment paper.
  • Step 6 – Sprinkle cinnamon-sugar mixture on top of batter.
  • Step 7 – Place cake form in the oven (preheated to 350°F). Cook for about 50 minutes or until a toothpick comes out clean.
  • Step 8 – Cool cake for about 15 minutes and take out of form and cool completely.

Ingredients
 

  • 1.5 cups bananas, ripe and mashed
  • 2 eggs
  • 1/2 cup butter, melted
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1.5 teaspoon cream of tartar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Cinnamon Sugar Topping

  • 2 teaspoons cinnamon
  • 1/2 cup granulated sugar

Instructions
 

  • Preheat the oven to 350°F. and line a cake form (9') with parchment paper.
  • Mix the wet ingredients in a large bowl: mashed bananas, melted butter, and eggs.
  • Mix the dry ingredients in another bowl: all-purpose flour, baking soda, sugar, cream of tartar, salt and cinnamon.

  • Add dry mixture to wet mixture and whisk until there are no dry spot visible.
  • Pour the batter in a cake form of 9".
