Applecarrés for Two

Appelcarrés are a Dutch pastry — little filled squares of dough with slits cut into the top, baked until golden and eaten warm. They are not widely known outside the Netherlands, which is a gap in the world's pastry knowledge that this recipe is happy to address.

Inside each square is a filling of apple, raisins, cinnamon, and a little sugar and cornstarch to bind it; familiar flavors, held together neatly by the pastry. The slits in the top let steam escape and give the finished carré its characteristic look. An egg wash goes on before baking for a deep golden finish. The sheet pan format means no special equipment, and the recipe makes exactly the right amount for two people.

These sit somewhere between a hand pie and a turnover, and they are better described by eating than by reading about them. Make them once and you will understand why the Dutch have been baking them for generations.

  • Apple -your favorite apple dessert apple. Mine is Honeycrisp or Granny Smith.
  • Raisins – you can also use dried apricots or cranberries (if you want to be more seasonal).
  • Sugar
  • Corn starch – Will catch some of the liquid.
  • Cinnamon
  • Egg – the ‘glue’ that keeps the dessert together, and it adds shine and a golden color.

Step 1 - Make the apple filling by mixing the apple (peeled and cut in small cubes), raisins, sugar, corn starch and cinnamon.

Step 6 – Place the applecarré on a baking sheet, lined with parchment paper. Brush the entire applecarré with egg wash and transfer to a 400°F. oven.

Take applecarré out of the oven and allow to cool. This apple dessert is best enjoyed on the day of baking. You can eat it warm or cooled or any temperature in between. Cut the applecarré in half and you have a 1-person portion.

Notes

  1. You only need 1/4 apple for this recipe. Please don’t throw the rest away. You can eat it (most of us don’t eat enough fruit) in the spirit of ‘an apple a day, keeps the doctor away’ or you can use it in apple sauce or a salad.
  2. Place the other half of the pastry dough back in the freezer or use it to make savory snacks or another applecarré, so you have a dessert for 2 days.
