Chocolate Grape Tarts for Two

Chocolate and red grapes is a combination that sounds unlikely until you try it, and then it sounds obvious. The slight bitterness of finely grated dark chocolate against the sweet-tart pop of the grapes, held together in a golden puff pastry shell. This is one of those desserts for two that looks elaborate and comes together with almost no effort.

The puff pastry bakes into a golden, flaky base. A thin layer of finely grated dark chocolate goes down first, which softens slightly against the warm pastry and forms a barrier that keeps the base crisp. The halved red grapes are arranged across the top and they are sweet, juicy, and vivid against the dark chocolate beneath them. Each bite delivers the contrast the recipe promises: rich and bitter below, bright and fruity above.

Two tarts, one sheet pan, and a dessert that requires no custard, no cream, and no complicated technique. Green or black grapes work just as well if red are not available, though the color of red grapes against the chocolate makes the most compelling argument for seeking them out.

How to Make Chocolate Grape Tarts

Step 1 - For 2 tarts, cut half a sheet of pastry dough in half. Place each square on a baking sheet lined with parchment paper.

Using a small knife, score (making sure not to cut all the way through the pastry) the perimeter to create a border approx 1/4-1/2 inch from the edge. You can punch tiny holes in the dough with a fork, in order to prevent the part inside the border to puff up. Since the filling (grapes) is relatively heavy, there is not really a need to do this.

Step 2 – Divide the grated chocolate over the two tarts and spread it out as much as possible, within the border.

Step 4 – Place the baking sheet in an oven of 400°F for about 20 minutes.

Notes

  1. Any color of grapes will do, or any combination of colors.
  2. Egg wash can be made with water, milk or cream.
  3. You can punch tiny holes in the dough with a fork, in order to prevent the part inside the border to puff up. Since the filling (grapes) is relatively heavy, there is not need to do this.
  4. The egg wash will give the border of the tarts a nice shine, but can burn easily during baking, so keep an eye on that. One way of preventing that is to brush the egg wash on the border, just before the end of the baking time.
  5. Please allow the tarts to cool a little bit before you take a bite; the grapes will be hot inside and you could burn your lips.
