- Bibb lettuce – I found this beautiful baby butter lettuce with red and green coloring as an extra touch for this salad. Any other salad will do in principle; I wanted to keep the textures delicate and thus used bibb lettuce.

- Mayonnaise – I used full fat mayo for flavor
- Yogurt – here you can use any fat level you want. I would suggest not to use low fat mayo and low fat yogurt. You want some fat to aid in flavor of the dressing.
- Lemon juice

How to Make Chicken & Peach Salad for Two
Step 1 – Season strips of chicken breast with salt and pepper. Heat oil in a skillet and sauté the chicken strips until done.
Remove from heat and allow to cool.


Step 2 – Toast the pine nuts in a 350°F oven until they are golden brown. Read this post on how to toast nuts and seeds.
Step 3 – In a large bowl, make the dressing by combining mayonnaise, yogurt, lemon juice, curry powder, ginger powder, cardamon, salt & pepper.
If the flavor is too tangy for you, add a little bit of sugar.


Step 4 – Add butter lettuce and peach slices into the bowl with the dressing and give it a quick mix.
Step 5 – Add the sautéed chicken and mix again, so the dressing is well distributed over the entire salad.

Step 6 – Divide the salad over two bowls or plates and sprinkle with the pine nuts.

Alternative & Substitutes
- Your choice of lettuce is endless, but consider the textural combinations and flavors. Ripe peaches are very juice and in combination with the butter lettuce from a delicate match. Crispy lettuce will almost certainly mask some of the juiciness of the peach.
- Peaches can be replaced by apricots, but apricots are less juicy. Better substitutes are nectarines or plums.
- Toasted pine nuts are rather neutral in flavor. If you want to add nuts with a little more presence, think about almonds, walnuts or pecan.
- Instead of chicken, you could use turkey or go the fish angle and try salmon.
