Pasta with Brown Butter Sauce is one of those deceptively simple dinners. It is amazing that good pasta, good butter, and some genuine Parmigiano Reggiano are enough to create such a tasty dish. Brown butter brings a deep, nutty richness to the pasta, turning a short ingredient list into something warm, flavorful, and surprisingly elegant.

Ingredients
3ouncespasta
2tablespoonsbutter (NOTE 1)
3tablespoonsParmigiano Reggiano cheesegrated
salt and pepper
Instructions
Bring salted water to a boil.
Add pasta and cook according to directions on the packaging.
Brown the butter in a skillet. (NOTE 2)
Drain the pasta and reserve some of the pasta water.
Add the pasta to the skillet and toss to coat the pasta with the butter.
Add 2 tablespoons of grated Parmigiano Reggiano and mix again.
Add pasta water, a little at a time, and continue stirring until you have a thin sauce.
Serve the pasta in warm bowls or on warm plates. Season with salt and pepper if needed and sprinkle with the remaining cheese.
Notes
Cooking the pasta takes most of your time. Browning the butter, in the quantities of this recipe will be about 5 minutes. I took a round number 10 minutes to cook the pasta, but it may be less or it may be more, all depending on which pasta you will be using.
You can use unsalted and salted butter. Cultured butter also works. Be aware that salted butter foams more than unsalted butter during the browning.
