This salad offers a perfect balance of flavors; sweet mango, watery cucumber, creamy avocado, fruity bell peppers and tangy lime vinaigrette. The textures in this salad vary from from soft, smooth and creamy to crispy and crunchy.
All the ingredients in this refreshing salad are technically fruits; though avocado and bell peppers are often mistaken for vegetables. Their rich textures and vibrant flavors add a satisfying, feel-good quality to the dish. Enjoy it as a light snack or a flavorful side. For a heartier option, toss it with crisp green lettuce for a more traditional salad, or mix it with grains like farro or quinoa to make it more filling.
