Ingredients
1/2English cucumber
1mediummango
1avocado
1/4red bell pepper
1tablespoonolive oil
2tablespoonslime juice
salt & pepper
Instructions
Peel the mango, avocado and cucumber. Cut all three is similar sized cubes, this way you will have an easy uniform distribution of color and fruits. Cut the red bell pepper in tiny cubes and chop the parsley fine.
Transfer mango, avocado, cucumber, bell pepper and parsley to a bowl and mix.
Make the vinaigrette from olive oil, lime juice, salt and pepper. Pour this over the salad and mix again. Season with additional salt & pepper if needed.
