When you like eggs for breakfast, you will enjoy this classic spinach omelet with cheddar cheese. It’s a fast and flavorful dish and, maybe the best thing, there are so many ways you can remix this omelet recipe.

Ingredients
6eggs
2ouncesbaby spinach
2ounceswhite cheddar cheesegrated
salt & pepper
nutmegoptional
Instructions
Coarsely chop the spinach. Whisk the eggs with salt and pepper and add the spinach. (NOTE 1)
Heat olive oil or butter in a non-stick skillet and pour in the egg mixture. Sprinkle the grated cheese on top.
On low heat cook the omelet until the cheese is melted and there is no flowing liquid egg left.
Remove the pan from the heat. Double the omelet, or roll it up. Serve it with bread or sandwich it between two tortillas and enjoy!
Notes
If you like more protein in your breakfast, add about 1/3-1/2 cup of cottage cheese per person. This will add about 10-14 grams of protein to each omelet. Mix the egg mixture or use a blender if you don’t want the white dots showing up in your omelet.
