Ingredients

pearl couscous
1/4
onion
1/2
orange bell pepper

tablespoon
olive oil
1/2
cup
pumpkin puree
1/4
cup
half and half
salt and pepper
parsley
chopped
Parmigiano Reggiano cheese
grated
Instructions
Bring water to a boil and cook the couscous according to direction on the packaging.
Cut the onion and the bell pepper into small pieces.
Heat the olive oil in a skillet and cook the onion and bell pepper until slightly softened.
Add the pumpkin puree and the half and half. Mix and warm.
Drain the couscous and add to the skillet. Season with salt and pepper.
Mix everything together and sprinkle with parsley and grated cheese.
