This Mango Cucumber Salad with Serrano Ham is so quick to make, and so refreshing, that I instantly decided to make this salad on repeat.

Ingredients
1mango
1/2English cucumber
2tablespoonsparsley (NOTE 1)finely chopped
1/2tablespoonsesame seeds
salt & pepper
3ouncesserrano ham (NOTE 2)slices
Honey Lime Dressing
1tablespoonolive oil
1/2limejuice
1/2tablespoonhoney
salt & pepper
Instructions
Peel the mango with a vegetable peeler. This way you only cut the skin off and don’t cut off any mango meat. Use the same vegetable peeler and cut ribbons from the fruit.
Wash the cucumber and use that same vegetable peeler to cut ribbons. This way the size and thickness of the ribbons are similar to the mango.
Make a honey-lime-dressing by mixing olive oil, lime juice, honey, salt & pepper. Add this to the ribbons as well as finely chopped parsley and mix.
Season with additional black pepper and sprinkle with sesame seeds.
Dress up with Serrano ham and serve.
Notes
Instead of parsley, use cilantro.
Instead of serrano ham, use it's Italian version, prosciutto ham.
