Couscous Arugula Strawberry Salad is a light but satisfying recipe for two that works beautifully for lunch or a simple dinner. The couscous gives the salad substance, the arugula adds a peppery edge, the strawberries soften everything with sweetness, the feta adds the necessary protein and the poppy seeds take care of a slight crunch. It is a fresh, small-batch salad that feels lively and balanced from the first bite.
