A curry dressing made from mayonnaise, yogurt, lemon juice, curry powder, ginger, and cardamom sounds like it belongs on a sandwich, and it does, but it belongs on a peach and chicken salad too. The warm spices against the sweetness of ripe peach is a combination that stops you mid-bite and makes you want another forkful before you have finished the first.

Ingredients
8ounceschicken breastcut in thin strips
1tablespoonpine nuts
2peachespeeled and cut in small wedges
salt & pepper
3cupsbutter lettuce
For the Dressing
2tablespoonsmayonnaise
2tablespoonsGreek yogurt
1/2teaspoonlemon juice
1/8teaspoon ginger powder
1/8teaspooncurry powder
1/8teaspooncardamom
1/8teaspoonsalt
1/8teaspoonpepper
Instructions
Season strips of chicken breast with salt and pepper. Heat oil in a skillet and sauté the chicken strips until done.
Remove from heat and allow to cool.
Toast the pine nuts in a 350°F oven until they are golden brown. (NOTE 1)
In a large bowl, make the dressing by combining mayonnaise, yogurt, lemon juice, curry powder, ginger powder, cardamon, salt & pepper.
Add butter lettuce and peach slices into the bowl with the dressing and give it a quick mix.
Add the sautéed chicken and mix again, so the dressing is well distributed over the entire salad.
Divide the salad over two bowls or plates and sprinkle with the pine nuts.
