What began as a simple combination of apples, celery, and mayonnaise has evolved into a versatile and beloved salad that can be found worldwide. This simplified Waldorf salad keeps the spirit of the original, but replaces the mayonnaise with a honey mustard vinaigrette.

Ingredients
2.5ounces celery
5ouncesGranny Smith apple
2tablespoonswalnuts(NOTE 1)
celery leaves
For the Vinaigrette
1tablespoonlemon juice
1/2tablespoonDijon mustard
1/2tablespoonhoney
1.5tablespoonsolive oil
salt & pepper
Instructions
Make the vinaigrette by mixing lemon juice, Dijon mustard, olive oil and honey. Season with salt and pepper.
Cut the celery stalks on a diagonal, for a different look. Peel, core and quarter the Granny Smith apple and slice thinly crosswise. Toast and chop the walnuts. Chop celery leaves.
In a bowl, combine apples, celery, and walnuts. Add the vinaigrette, season with salt and pepper and toss to coat.
