A Cobb salad is already a generous bowl. Replace the standard chicken and blue cheese with salmon and goat cheese, add sweet corn and creamy honey mustard dressing, and it becomes something that feels entirely its own. Every component arranged separately on butter lettuce so the colors stay distinct and each person builds their plate from what is in front of them.
Heat the oven to 400°F and line a baking sheet with parchment paper. Season the salmon with salt & pepper and place it on the parchment paper. Insert the Meater, if you have one, and cook the salmon until it reaches the doneness you prefer. Allow to cool a little. This will take about 10-12 minutes, depending on the thickness of your fillet.
Cut all the ingredients for the salad in your preferred size; lettuce, cucumber, tomatoes, avocado, corn, and hard boiled egg. Crumble the goat cheese and break the cooled salmon in large chunks.
Make the dressing by transferring all ingredients, except the olive oil, to a bowl or tall sturdy glass. With an immersion blender mix until you have a unified mixture and the salt is dissolved and spices well mixed. Then slowly add the olive oil while the immersion blender is running.
Arrange the salad on a large dish. Start with the base, the butter lettuce, and arrange corn, cucumber, avocado, tomatoes and egg halves on top. Do this in a organized manner, or color by color, in rows or any way that looks attractive.
Drizzle the dressing over the salad (or serve it separately) and divide the crumbled goat cheese over the salad.
