This Taleggio Arugula Tortilla Panini says it all; a pressed sandwich of tortillas with Taleggio cheese and arugula. Nothing more to it. The flavor however is absolutely great and it is so different from many other Italian paninis. You really need to try and experiment with cheese. Taleggio; a great Italian stinker, has a wonderful soft texture and is flavorful, creamy and not too stinky.

Ingredients
4whole wheat tortilla9-inch
8ouncesTaleggio cheese
2cup arugula
pepper
Instructions
Slice the Taleggio cheese thinly, with or without rind.
Lay one tortilla in a dry skillet or griddle pan.
Divide half of the cheese over the tortilla, sprinkle with pepper and spread 1 cup of arugula over the cheese.
Cover with second tortilla.
Place skillet over medium-high heat and cook until tortilla is browned and cheese melts, 1-2 minutes.
Flip tortilla and cook another 1-2 minutes; place another skillet on top to squeeze the tortillas together and keep them flat.
Keep this panini warm and cook the second one the same way.
