A fully loaded salad, packed with bright flavors and nutrients, like good fat, healthy proteins, and a variety of fibers. This Quinoa Chickpea Salad with Grapefruit is vegetarian, but can be vegan by omitting the cheese.

Ingredients
For the quinoa
1/2cupquinoa
1/4cup red onionfinely chopped
1teaspoonturmeric
salt
For the salad
1grapefruitpeeled and segmented
1avocadosliced
1/2canchickpeasdrained
1/4red onionchopped
2ouncesgoat cheesecrumbled
sproutsoptional
parsleyfine chopped
For the dressing
1/2orangejuice only
1/2limejuice only
2tablespoonsolive oil
salt & pepper
grapefruit juicedrippings
Instructions
Heat olive oil in a pan and cook the red onion until translucent. Add water for the quinoa and cook until done. (NOTE 1)
While the quinoa cooks, start prepping the vegetables; drain the chickpeas, chop the parsley and peel and slice the avocado and grapefruit.
Once the quinoa is cooled a little and lovely and fluffy, add the drained chickpeas and mix.
Crumble the goat cheese and add to the salad.
Place the slices of avocado and grapefruit on top of the goat cheese.
Make the dressing from orange juice, lime juice, grapefruit juice, olive oil and salt & pepper and pour it over the salad.
Garnish the salad with sprouts and parsley and enjoy!
