These oven-baked sweet potato fries are so fast and easy to make, that it is a miracle we don't make them more often. These fries are even healthy.

Ingredients
1poundsweet potato
1tablespooncornstarch
1pinchsalt
1tablespoonolive oil
Instructions
Preheat an oven to 450 degrees F. Line a baking sheet with parchment paper.
Peel the sweet potato and cut into sticks the size of your desired French Fries. I prefer a 1/4" wide and thick. Try to cut them all into a similar size, so they bake evenly.
Sprinkle the sweet potato fries with corn starch and salt and try to coat all the fries lightly. Drizzle the olive oil over the fries and toss the fries so they are all covered. If you see dry spots with just corn starch, rub that spot with your fingers.
Place fries on the baking sheet, in a single layer and bake in the oven for 20 minutes. Turn the fries and bake again for 15-20 minutes. Depending on the size of your fries, you may need to adjust the baking time.
