A balanced meal that is super tasty; curried tender pork in a coconut sauce with fresh mango and crispy snow peas, served on a bed of fluffy brown rice. It’s an easy recipe to make and it’s also easy to switch things up.

Ingredients
1/2cupbrown rice
8ouncespork tenderloincut in 1-inch cubes
salt & pepper
1/2teaspooncurry powder
1tablespoonoil
2.5ouncessnow peascut in half, if necessary
1/4cupcoconut milk
1/4teaspoonred curry paste
1/2teaspoongingerminced
5ouncesmangocut in cubes
Instructions
Cook the brown rice according to the directions on the packaging. This will take about 40-45 minutes. Usual ratio is 1:2 = 1/2 cup of rice and 1 cup of water.
Cut the pork in strips or cubes and season with salt, pepper and curry powder. If necessary, cut the larger snow peas in half.
Heat a tablespoon of oil in skillet and saute pork and snow peas for 3-5 minutes.
Add coconut milk, minced ginger and red curry paste and bring to a simmer.
Add mango pieces and heat until all is thoroughly warm. Add salt & pepper to taste.
Divide brown rice over 2 plates or bowls and serve Curried Pork in Coconut Sauce with Mango & Snow Peas on top.
