Ingredients
1 1/2cupswhite wheat flour
1/2cupall-purpose flour
1teaspoonbaking soda
1/2teaspoonsalt
1/2teaspoonpepper
2cupsIrish cheddar with whiskey
2tablespoonssagefinely chopped
1cupbuttermilk
1egg
Instructions
Heat oven to 425 degrees F.
Lightly grease and flour a round pan or bake the bread on a baking sheet.
In a bowl milk together all the dry ingredients and cheese and sage. Keep a little bit of cheese behind to cover the top of the cheese. In a separate bowl mix buttermilk and egg and whisk until mixed.
Add buttermilk mixture to dry ingredients and mix until you have a sticky dough that you form as a ball.
Place on a floured surface and lightly knead. Not too long, but just enough to make sure that all is well mixed.
Place in round pan or baking sheet. Use a knife and cut a cross in the top of the dough.
Cover pan and bake for 30 minutes. Remove cover, sprinkle left over cheese on top of bread and bake for another 15 minutes.
Allow bread to cool before slicing and serve with butter.
