Watermelon Feta Dessert with Chia Seeds was born out of a desire to combine the Mediterranean watermelon – feta combination with the a chia seeds dessert. Sometimes it is that simple.

Most of us seem to love the sweet chia seeds puddings, with fruits, chocolate, and all other delicious combinations, as well as the breads, pancakes, muffins and similar recipes. Why don’t we have more of these super-druper ingredients; healthy, versatile, easy to use, delicious?

For those of you, how don’t know me; I am not a person who jumps on every ‘healthy’ bandwagon, and follow every fad. On the other hand, I am a person who likes to try and taste new things and I will draw my own conclusions, based on my experiences.

On all my international trips, I ate a lot of strange, unknown food, stuff I never heard of, never even seen and certainly never tasted. Often I ate something and only found out at the end of the meal what it was that they served me, much to the amusement of my host.

I ate many animal body parts, you don’t often see, if at all, on restaurant menus here in the US; some I liked, some I didn’t. I ate vegetables, plant I never seen before and I saw preparation methods I would never thought of myself.

These experiences enriched me and changed me. Culture, religion, mentality, education, habits all have an influence on what people cook. It influences their meals and recipes and the reason why, when, where and how meals are served. I helped me understand a little bit about the different people I met. So yes, I will try almost anything. What is the exception, because I said ‘almost’? I don’t know at this very moment, but I am sure there are a few. So yes, I did try chia seed and yes I do enjoy eating them. They are proven healthy; they deliver healthy nutrient in a quantity that we can actually consume on a regular basis.

But, I am not a fan of eating ‘healthy food’ that only appears to be healthy in quantities we can never achieve eating; I don’t call that healthy food. I call that a sales pitch. That was a long explanation for why I made Watermelon Feta Dessert with Chia Seeds; I like chia seeds and they are healthy at the same time… two good reasons in my book!

Other than chia seeds, this recipe has a watermelon feta part. Ingredients I love to eat during the summer time; so refreshing, yet to incorporate these two in a chia dessert needed some thinking.

How to make feta less sharp, without compromising the flavor? …… a feta mousse. Feta, mascarpone and cream are the basic ingredients for the mousse and alternating the chia, watermelon, feta mousse works well and tastes well and looks good. I used a tiny cookie cutter (star) to cut the watermelon, but just small cubes will do fine or any other shape you can think of.

Watermelon Feta Dessert with Chia Seeds

Watermelon Feta Dessert with Chia Seeds was born out of a desire to combine the Mediterranean watermelon – feta combination with the a chia seeds dessert.

Ingredients

  • 1 cup milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey
  • 1/2 cup feta cheese
  • 8 ounces watermelon
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • basil or mint

Instructions

  • In a bowl, whisk milk and honey until blended. Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled. Cover and refrigerate overnight.
  • The next day. Whip cream until it begins to form firm peaks.
  • Cut feta cheese in small pieces, add mascarpone and puree in food processor.
  • Fold whipped cream in the feta mixture and refrigerate.
  • Cut watermelon in small pieces (discard seeds). I used a tiny star cookie cutter.
  • Spoon the half the chia pudding into 2 bowls or glasses; divide the watermelon over the 2 glasses (leaving a few pieces for decoration).
  • Divide feta mousse over watermelon and cover with remaining chia seeds pudding.
  • Decorate top of dessert with watermelon and basil or mint and serve.
