Strawberry Mousse for Two

This Strawberry Mousse for Two is a very simple dessert, and it incorporates the strawberry, a symbol of spring. Whip the cream, and mix with sugar and strawberries, emphasis on strawberries. Spring has sprung, so we can finally shift our choice of ingredients. It’s not that strawberries were never available, I guess it’s more a mental shift.

This dessert is not meant to be fancy or anything, just really flavorful and served in tall glasses for some additional flair. You may think, “I’ll eat fresh fruit with cream, big deal”! Realize this, every year, during the Wimbledon Tennis Tournament, people can’t get enough of strawberries and cream. And they cannot stop talking about it, as if it is something special and it may be special, because you eat it as Wimbledon. So, let’s agree this dessert is worth eating and simple to make, so no excuses. Not everything has to be complicated; usually the simplest of things, when they look right, feel right, taste right are more satisfying than a work of art that is not totally what you anticipated.

How does this Strawberry Mousse come together?

Whip the cream and place fruit in a food processor. Process to a puree. Add powdered sugar and pulse briefly to combine. You can also use an immersion blender. At this moment, you can pour the strawberry mousse through a sieve, if you want a super smooth mousse. I prefer not to do that, and actually enjoy the crunchy pieces that you’ll have when you make strawberry puree.

Combine whipped cream and strawberries puree. Don’t mix more than necessary, the more air stays in the cream the better. Place in fridge for a few hours, allow it to thicken just a little bit. Now it is time to fill the glasses. First some strawberry pieces, you did not pureed, then mousse, strawberry pieces again, and the rest of the mousse. Don’t want to go the fancy way, just pour it in a bowl; the taste does not change.

Ingredients

  • 1/2 pound strawberries
  • 2 tablespoons powdered sugar
  • 3/4 cup whipping cream
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons powdered sugar

Instructions

  • Wash the strawberries, hull them and cut them in quarters (leave a few pieces behind for decoration) and place fruit in a food processor. Process to a puree. Add the 2 tablespoons of powdered sugar and pulse briefly to combine. You can also use an immersion blender.
  • In a bowl mix whipping cream with vanilla extract and 2 tablespoons of powdered sugar and whip it stiff.
  • Mix the strawberries with the whipped cream and place bowl in the refrigerator for 2 hours.
  • Divide 1/4 of pieces of strawberries over 2 tall glasses, spoon 1/4 of mousse on top, strawberry pieces again and remaining mousse.
  • Top with a strawberry.
